On Monday, October 31, 2022, The FFMA (Filipino Food Movement Australia) proudly featured Chef Jasper Far for an extraordinary Mabuhay Nights event.

Chef Jasper curated an exceptional dinner, drawing inspiration from his personal migration journey to Australia and the remarkable perseverance that led him to become the Executive Sous Chef at the newly opened Ace Hotel Surry Hills. Through his culinary expertise, he crafted dishes using fresh, seasonal, and locally sourced ingredients. Each plate showcased progressive flavors, rooted in his past roles and cherished memories, offering a taste of his incredible culinary journey.

ABOUT CHEF JASPER FAR

Having completed a Biology degree in the Philippines and working as a researcher for about 6 months, Jasper convinced his father that he wanted to enrol culinary school with the agreement to pay half of the tuition fees. Graduating from MIHCA (Magsaysay Institute of Hospitality and Culinary Arts), Jaspers first role was as a cook at Albergus Catering giving him the experience to cater for events with up to 5000 people. After this, he started a role at Princess Cruises where he would travel for the first time. Little did he know that he would have to peel and process fruits and vegetables for the whole ship's crew for one year straight! Slowly but surely Jasper stepped up the ladder, learning several sections like garde manger, sauce, soup-veg-pasta, coffee-cold fruit section, grill-seafood etc. then training in specialty outlets like the Sterling Steakhouse, Terrace Grill (American Themed Outdoor Grill), Sabitini's (flagship Italian Bistro), Kai Seafood (Japanese Sushi/Oyster Bar), Share (Curtis Stone's Restaurant at sea).

The next chapter of his culinary career brought him to Sydney gaining a sponsorship with Merivale working at their flagship Mexican cantina called El Loco allowing him the opportunity to venture into their other venues like the Vic on the Park, Wynyard Hotel, Tennyson Hotel, SCG, and The Duke of Gloucester.

During the pandemic Jasper started a youtube channel called 'Jasper Far Cooks' with the aim to help people cook up meals during those tough times. It focused around popular Filipino dishes transforming into more tutorials to show basic cooking techniques like frying, baking, pickling, sushi making, etc.

Jasper is currently the Executive Sous Chef at LOAM located at the newly opened Ace Hotel in Surry Hills, a brand that is based in the US, within a number of hotels in Canada, UK, and Japan.
