In an electrifying partnership with Manila St (Sydney) and Filo Artisan Trade (Melbourne), the Filipino Food Movement Australia joyously introduced Chef Miko Aspiras for his grand debut Down Under.

Dessert aficionados embarked on a tantalizing journey named Tamis Alat Asim (translates to Sweet Salty Sour). Led by the incredibly talented Executive Pastry Chef Miko Aspiras, guests indulged in an epicurean adventure that flaunted his distinctive style. Sydney experienced a burst of vibrant colors and intricate flavors, a true reflection of Chef Aspiras' Filipino heritage.

The remarkable dessert soirée, held on Monday, September 23, 2019, at Ovo Boteco Potts Point, transformed the culinary landscape. Dishes like Ma-PILIng almusal and Halo Halo were reimagined in glamorous and innovative presentations, setting a new benchmark for dining experiences, leaving an unforgettable impression on all attendees.

 

Miko Aspiras

Executive Pastry Chef Miko Aspiras is one of the Philippines most honoured Pastry Chefs – with over eleven years’ experience he has gained notoriety in achievements such as Tatler Philippines Best Pastry Chef 2018, Semi-Finalist at the Valrhona C3 Asia Pacific 2018, Forbes Asia Magazine 30 under 30 most influential 2018, World Gourmet Summit 2016, Featured Speaker at Madrid Fusion 2016 and ESQUIRE Magazine Philippines Chef Of The Year 2015. In 2016, he was the Featured Speaker and lecturer at the Madrid Fusion 2016 while also consulting for Philippine Airlines. Miko has held esteemed roles at Edsa Shangri la, Resorts World Manila, Raffles Fairmont Makati and he now brings his wealth of knowledge and experience to the Hilton, Sydney as Executive Pastry Chef. He also remains consulting ambassador to the Tasteless Food Group (Philippines).

Filo Artisan Trade - Chris Uson

Filipino Born Chris Uson with a background in Electronics Engineering migrated to Melbourne in 2007 along with his beautiful wife Jean. Early 2019 Filo Artisan Trade was born, importing high-quality Philippine products with the main focus on cacao and coconut based products showcasing the “Premium 7” export ingredients. Filo Artisan Trade stocks brands such as Auro Chocolates, Malagos Chocolate, Buko Foods PH, Rosarios Chocolates, Theo and Philo Artisan Chocolates and Cacao Culture Farms. Chris also part owns a native restaurant in Davao “Maa To Ro” while also cultivating a farm in Samal Island named “Three Point Seven Acres” for future Agritourism development.
