Mama Sita’s BBQ Lettuce and Green Mango Salad

Ingredients:

50gm Mama Sita’s Sinamak Vinegar

3 pieces Baby Gem Lettuce

1 Large Green Mango

200gm Cherry Tomatoes

30gm Fried Shallots

80gm Extra Virgin Olive Oil

Salt and Pepper to taste

Method: 

Wash the lettuce heads and cut halfway, remove the core.

Slightly char the gem lettuce and the tomatoes on the grill or BBQ, then set aside.

Warm the olive oil and add the fried shallots. 

Using a peeler, shave the green mango.

Combine in a large bowl, pour over Mama Sita’s Sinamak Vinegar and toss to coat.

Season to taste.
