Head Chef MJ Olguera, deeply rooted in his Filipino heritage, skillfully presented rich and vibrant flavors, transcending guests to the essence of the Philippines at Luke’s Kitchen.

This extraordinary dining affair featured a four-course degustation menu complemented by a refreshing non-alcoholic drink upon arrival. Highlighting Filipino ingredients such as calamansi, rambutan, and moringa flowers, it was a culinary journey like no other.

The FFMA (Filipino Food Movement Australia) is proud to present Chef Vico Betguen and Chef Miguel Angelo Oppus for this Mabuhay Nights Event where they will be showcasing a Modern Karinderya Degustation Menu transforming popular Filipino dishes using modern techniques that will sizzle your taste buds with scrumptious and mouthwatering dishes such as sisig, kare-kare and pork silog but not as you may traditionally know it!

This specially curated dinner by Chef Jasper is a reflection of his personal migration journey to Australia and the perseverance required to progress to his current role as Executive Sous Chef at the newly opened Ace Hotel Surry Hills. Using fresh, seasonal and locally sourced ingredients, the dishes presented will be progressive and draws inspiration from his past roles and loving memories.

On the 29th August 2022, The FFMA were delighted to present Guest Chefs Francis Dela Cruz and Aileen Aguirre drawing inspiration from Dela Cruz and Aguirre’s childhood memories with a Philippine influenced multi course dinner menu that sparked joy and inspiration to a full house.

On the 23rd and 24th May 2022, Miko Aspiras, Will Mahusay and Santiago Cayugan joined forces for an evening of SALT SUGAR ATBP, a multi course dinner degustation using local and specifically sourced ingredients, presented to you by the Filipino Food Movement Australia. The evening was devoted to taking you on a passionate quest of the Flavours of the Philippines that tantalised everyone’s tastebuds.

In partnership with Manila St (Sydney) and Filo Artisan Trade (Melbourne) The Filipino Food Movement Australia was very proud to have hosted Chef Miko Aspiras for his first ever Australian event on the 23 September 2019.

Through her Salo Series of pop-up Kamayan dinners, Yana Gilbuena joined forces with the Filipino Food Movement Australia on Tuesday 9th July and Wednesday 10th July 2019 to the most colourful Kamayan Feast Sydney had ever seen.

In honour of Philippine Independence day (12 June) The Filipino Food Movement Au presented Head Chef Nina Cruz from Sizzling Fillo and Head Chef Pierre Marie Lucente from Chicago Jones together for a special dinner through six exquisite dishes celebrating Filipino flavours using seasonal, local Australian produce alongside much-loved Filipino elements.

The first Ever Mabuhay Nights event was be held at Sydney Cebu Lechon in Newtown on the 8 May 2019.
