Mama Sita’s Chicken Adobo

Ingredients:

125ml Mama Sita’s Coconut Nectar Vinegar

1kg Chicken thighs and leg, in bone

7 cloves Garlic

½ Onion

60ml Light Soy Sauce

½ tsp Black Peppercorns

5 pieces Dry Bay leaves

4 Desiree Potatoes, medium

4 tbsp Vegetable oil

Method:

Heat a large pan on medium high heat and add the oil.

Sear the chicken pieces until browned but not cooked through. Set aside.

Using the same pan, turn heat down to medium low, then add garlic and sliced onion, cook till softened. Keep your eye on it and stir so it doesn't burn.

Add the chicken pieces back in the pan, followed by bay leaves, peppercorns, soy sauce and vinegar. Do not stir, and let it steam to release the acids for 10 minutes.

Add in 1 cup water, stir and turn the heat down to a low simmer. 

Cook covered for 30-45 minutes or until cooked through. 

In the last 25 minutes, add the potatoes and continue cooking.

Season to taste.

Serve with steamed rice.
