Ube Lava Cake

Ingredients:

50g white chocolate

50g ube powder

60g melted butter

1 large egg

65g all purpose flour

5ml ube flavouring (optional)

15g of preferred sweetener

Method:

Add water into a small pot and bring it to a simmer, prepare a heat proof bowl which fits the pot

and add the white chocolate into it. Place the bowl on top of the simmering water but make sure

water isn't touching the bottom of the bowl. We are melting the chocolate bain marie style. Mix

the chocolate until completely melted.

Add in melted butter with the white chocolate and stir until completely incorporated then add

sweetener of choice, mix well.

Whisk in the egg, add in theq flour, ube powder and whisk again until smooth. Add a few drops

of ube flavouring if desired.

Thoroughly grease the insides of 2 ramekins (or any cake mold of your choice) with butter.

Make sure you don't miss any spots, to ensure cakes will pop out properly.

Divide and pour batter evenly into the two ramekins. Place it in the freezer for 30 minutes to an

hour.

While freezing, preheat the oven to 200C. When cakes have been frozen and ready for baking,

place ramekins onto a baking sheet. Pop ramekins into the oven and bake for about 8-10

minutes.

Carefully remove cakes from ramekin/mold using a spatula, dust with icing sugar or any

garnish of your choice. Serve warm and immediately.
