The Ingredients

2 1/2 Cup Glutinous Rice 
1 can coconut milk (Kara brand) 
1/2 can condensed milk 
1/3 Cup brown sugar (optional) 
4 Tbl Butter 
2 tsp Vanilla essence 
Banana leaves for lining the baking tray 
Muscovado sugar 

Method


Wash rice. 
Boil rice in rice cooker and cook as normal 
Place coconut milk, condensed milk, sugar, butter & vanilla in a non-stick pan (large enough to add the rice once it's cooked) and bring to the boil. 
Stir milk mixture so not to burn. 
Once thick in consistency, separate 1/2 c of the mixture and put aside for the topping 
Once the rice is cooked, add it to the milk mixture in the pan. Mix until milk mixture and rice is well combined. 
Line a baking tray 19cm square pan with Banana leaves. 
Place the rice mixture into the tray and spread evenly to the sides. 
Drizzle the 1/2c milk mixture over the rice mixture. 
Sprinkle Muscovado sugar on top. 

Bake in a 180c oven for 45 mins, until it is golden brown.
